As I relax after a veggie meal Chairman! let me let you know how I take advantage of the food these days given my diabetes:
No Beef! save now and then some cow heel soup
they say only a little pork if is cooked medium rare, on a mid to lower fire. High heat they say, makes the meat interact in ways that produces carcinogens in the meat. So if I eating meat I give myself the time to cook it properly according to directions.
But I don't really like meaty meats anyway. I don't know why but meaty meats don't really take well the taste from the seasonings as far as I taste it - a turn-off! .The boney parts and the skin do and that is what I like in the meats...all that is close to the bone, and the skin as well.
I do a lot of things with pork skin cutting off the fat entirely. there are time I leave about 5% of he fat and render it well seasoned to make crackling pork skin, crispy and tasty. I render the skin tender and make stews with zucchini instead of potatoes.
Chicken feet is another item I use up a lot. Very boney, no fat! always tasty and enjoyable. and I like Halal chicken feet at the market. I buy often.
Salmon strips from the belly of the fish they cut off to make the Salmon steak slices. They gather those in a package and sell anywhere from5 to 7 dollars. very delicious seasoned up properly with veggies of ones choice
I don't buy big meats anymore - not good for my health. I am an offal man now! a skin and bones man!
