Chef higgins and myself worked at the four seasons , he was a sous chef in the Cafe delabeurge restuarant and I was in Banquets . He was only half the size then and since he was scottish I used to call him the haggis basher
He left to become executive chef at the Royal york hotel and from there again left to assume the the post as head of the George brown college cullinary program .
I used to bug his about his ancestry relating how the scots would cross into England and kill the women and rape the cows and he would come right back at me with race jokes
Surprised to come across him on you tube and incidentally the best knives to get are the J A Henkalls brand . It comes with a chef , pairing , carving and fillet knives as well as a steel for sharpening
