I does use fresh pigtal and cook it in salt water. make it tas' like the real sal' pigtail save I have more confidence in the fresh pig tail than the sal' one.

and these days that can be saving behaviour too..that diet.
they put all kinds of chemicals on the big cuts of beef in particular to keep them looking red and juicy.
and some of the big cuts are put together from smaller cuts using meat glue a terrbile substance.
and old meat is renewed by one of them monoxide I believe. old dark meat is made to look good again when doused in tha substance.
I dont believe they bother about the lesser meats... those listed here. I buy oxtail and knuckles with greater confidence, as I ignore the strip steaks for eg...which are sometimes on sale at really good price at Fortinos
