The backside of the cow is not kosher due to the story of Jacob fighting with the angel.
After the fight he was limping in his thigh.
because of Jacob's struggle and his injury was in his thigh this was transferred to the cow.
This was related to the hind quarters from the cow because unless the sciatic nerve is
removed from the hind quarter of the cow, the cow is not kosher.
If the vein is removed then it becomes kosher. It's all inter-related.
The issue is that the nerve is rarely removed these days because it takes a highly
skilled shochet (trained butcher) to remove it to make it fit for Jews kosher consumption....
